Pineapple -Mango Mezcal Lollies.

Continuing into the fun staycation theme here is the perfect grown up ice lolly recipe to keep you chilled during the summer.

Wether you have them at home with your partner or take them to a picnic to share with friends, these fun lollies made with fresh fruit and spiked with mezcal are delicious, and just a bit of fun! they don’t mean to be that alcoholic is more about the smoky taste that the mezcal gives to this recipe.

I have been lately loving the mix of tropical fruit, lime and mezcal together, it just works! and here I use that lovely combo of ingredients into these perfect little iced lollies.

Makes about 5 ice lollies , depending on the size of glasses you use.

Ingredients:

1 ripe pineapple, (cut in chunks without the core and skin).

1 large ripe mango, ( slice and scoop out the flesh).

1 lime juice and zest.

2 tbsp agave syrup.

1 shot of mezcal.

5-6 espresso glasses.

Wooden lolly sticks.

Method.

  1. Add all the ingredients into your blender and whizz up until you get a smooth puree.

  2. Pour the mix into small size cups (I use small espresso glasses see picture below) fill them to the top, then place your glasses over a tray and into the freezer for 30 minutes.

  3. After 30 minutes take them out of the freezer and place the lolly stick in the middle of each cup, then return them to the freezer for a further 1- 2 hours.

  4. When you are ready to welcome guests, remove your cups from the freezer and place them under running water to release your lollies from the glass.

  5. Serve them over a small bucket with ice, you can add a bit of chilli powder or tajin if you like, enjoy!
